Peppermint Biscotti
From Taste of Home's Holiday & Celebrations Cookbook
Dipped in melted chocolate and rolled in crushed peppermint candy, this flavorful biscotti is a favorite. It's one of the many sweets I make for Christmas.

INGREDIENTS
3/4 cup butter, softened
3/4 cup sugar
3 eggs
2 teaspoons peppermint extract
3-1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup crushed peppermint candies
FROSTING:
2 cups (12 ounces) semisweet chocolate chips
2 tablespoons shortening
1/2 cup crushed peppermint candies
DIRECTIONS
In a large mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in extract. Combine the flour, baking powder and salt; stir in peppermint candy. Gradually add to creamed mixture, beating until blended (dough will be stiff).
Divide dough in half. On an ungreased baking sheet, shape each portion into a 12-in. x 2-1/2-in. rectangle. Bake at 350° for 25-30 minutes or until golden brown. Carefully remove to wire racks; cool for 15 minutes. Transfer to a cutting board; cut diagonally with a sharp knife into 1/2-in. slices. Place cut side down on ungreased baking sheets. Bake for 12-15 minutes or until firm. Remove to wire racks to cool.
In a microwave-safe bowl, melt chocolate chips and shortening; stir until smooth. Drizzle over biscotti; sprinkle with candy. Place on waxed paper until set. Store in an airtight container. Yield: about 3-1/2 dozen.

Chicken Update

Sadly, we have gotten rid of our former rooster, Doe. The reason was because he was being too aggresive. He was the only rooster in our coop and he thought he was the king. He also crowed to much. We live in a small city so we have noise oridnances. He would crow at like one o' clock in the morning.
Doe went to live with Southern Blessings because she live in the country and has other roosters. Doe actually got picked on as soon as he got there. While my mom was there, she and Southern Blessings decided to go to a livestock auction. Southern Blessings got 4 pullets, and we got one. All the pullets are light brahams. The breed originated in China. Now we have a French hen and a Chinese hen in our flock. We named our newest hen Chickety China the Chinese Chicken. But we call her China for short.
Isn't she the cutest little thing? Eveytime we go in there we cuddle her. Here she is resting on my oldest brother's shoulder. He didn't put her there. He was just sitting in that position near the nesting boxes on which China was standing and she flew on him.

Just an update

Wow homestead blog... It has been a while!
Well the truth is... my homesteading has gone on hold. First there was third trimester. Every time I would scrub or clean my floors I would go into braxton hicks. So I bummed out on homesteading. lol
Now there is a little baby in our home. And WOW... my home making is even worse! Yikes! I am at the newborn stage where all he wants to do is eat and poop and use me as a pacifier. Please let the slings come in the mail soon! I had a super awesome sling from and online work at home mother. My sister in law borrowed it and it was misplaced. She did buy me another sling to replace it but it is not working. It is a HARD shelled padded sling. Baby slides around in it. It is almost like holding a mini bassinette on your lap. totally NOT practical for doing housework.
So I contacted the WAHM who did my sling. She is not making new slings but has 8 left to sew up. so I got TWO! Once her slings are done she is done making them. It is a Wise Women Sling. They are so amazing. I cannot wait to get my replacement ones. Then I might get back to being more productive.
Here are a few pics just to update you on the new little man who is at our house! Wyatt Daniel Born 11/20/08 at a whopping 9#4oz. No epidural or pain meds. And PRAISE GOD I did not have to be cut and did not tear. So no stitches. PHEW! First baby Alyssa was only 7#8oz and I did have to be cut for her. The boys I got out free of stitches. I think that is one of the most painful parts of recovering. Taking care of your bottom. so it is really nice to be free of that burden.

Christmas Music

Over the past 16 yrs of wedded life, I have tried to simplify our Christmas traditions. It has been a journey the Lord has led us on. Years ago, we purposed in our hearts to place CHRIST in Christmas first and foremost. We avoid much of the "fluff" of the season that would easily wear down and exhaust a mother of many children.
One of our beloved Christmas traditions that we do enjoy is the singing of Christmas carols. Each day in the month of December we begin our devotions with the singing of a Christmas carol. For years we have been using Ace Collin's books on the Stories behind the Carols to help learn more about the history of the carols. These are a wonderful resource for any family who wishes to know more about the composers and how the carol came to be. This book can be purchased thru www.zondervan.com

Each year I choose a new carol to add to our group of carols we sing while we go caroling.
This year's pick is Angels From the Realms of Glory. It is a beautiful, old carol. My favorite part is the chorus:
" Come and Worship, Come & worship, Come & worship Christ the Newborn King!"
This Sunday we will begin our caroling. We carol each Sunday in the month of December. It's something we really look forward to! It brings such joy and it costs absolutely no money, does not create stress, and most of all it truly brings praise & glory to Christ the King!
Our family loves to sing the carols ~~ I hope you are all able to enjoy the lovely music of this season.......

Dinner tonight - Chicken stroganoff

Chicken Stroganoff
3 T butter
3 T Italian dressing mix (see recipe)
4-6 chicken breasts
8 oz cream cheese
1 can cream of chicken soup (see recipe)
place chicken, butter, italian dressing in crockpot on low. Cook 6 hours. 45 min before serving, mix cream cheese and soup, then pour over chicken.
Serve over egg noodles (start when adding cream cheese and soup).
Italian Dressing Mix
2 teaspoons oregano
1 teaspoon onion powder
2 teaspoons basil
2 teaspoons paprika
1 1/2 teaspoons pepper
2 Tablespoons garlic powder
6 Tablespoons granulated sugar
Mix and store in an airtight container.
To make dressing: Use 3 Tablespoon mix with 1 1/2 cups vegetable oil and 1/2 cup wine vinegar
makes 9+ T of mix
Canned “Cream of *** Soup”
INGREDIENTS:
2 cups dry milk
3/4 cup cornstarch
1/4 cup chicken bouillon granules
2 tablespoons dried onion flakes, optional
1 teaspoon dried leaf thyme
1/2 teaspoon dried leaf basil, optional
1/2 teaspoon dried leaf oregano, optional
1/2 teaspoon ground marjoram, optional
1/2 teaspoon pepper
2 to 3 teaspoons butter
PREPARATION:
Combine all ingredients except butter together and store in airtight container. To use, mix 1/2 cup dry soup mix with 1 1/4 cups water and cook until thick; add butter. This is equal to one can cream soup. The mix makes enough to equal 6 cans. For cream of mushroom or celery soup, add chopped sauteé mushrooms or celery along with the butter while cooking.
